Dough
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup shortening
- 3/4 cup sour milk or buttermilk (about)
Filling
- 1 1/2 cups diced apples
- Sugar, to taste
- Cinnamon, to taste
- Butter
Syrup
- 1 cup sugar
- 1/2 cup water
Instructions
- Preheat oven to 425°F and grease a baking pan.
- Sift flour, then measure. Sift again with baking soda and salt.
- Cut or rub in shortening until the mixture is as fine as coarse cornmeal.
- Add enough sour milk to make a stiff dough.
- Turn dough onto a floured surface and knead lightly.
- Roll dough into a rectangle about 20 inches by 10 inches. Cut into eight 5-inch squares.
- Place a small amount of apple in the center of each square. Sprinkle lightly with sugar and cinnamon. Dot generously with butter.
- Fold corners of dough toward the center and seal over the apples.
- Place dumplings in the prepared pan and bake for 15 minutes.
- While baking, heat sugar and water until the sugar is fully dissolved.
- Pour hot syrup over the dumplings. Return to oven and bake 15 minutes longer.
- Serve hot.
