Ingredients
For the crust
- 2 cups (200 g) almond flour
- 1 egg
- 1/4 cup (60 ml) melted coconut oil or unsalted butter
- 1/2 teaspoon vanilla extract
- 1 teaspoon salt
For the filling
- 2/3 cup (160 ml) fresh lemon juice
- 6 eggs
- 1 tablespoon lemon zest
- 1/4 cup (25 g) almond flour
- 1 teaspoon salt
Instructions
- Preheat the oven to 350°F. Line a baking pan with parchment paper so the bars are easy to lift out later.
- In a bowl, combine the almond flour, egg, melted coconut oil or butter, vanilla extract, and salt for the crust. Mix until a soft dough forms.
- Press the dough evenly into the prepared pan, making sure the surface is level.
- Bake the crust for about 10 minutes, just until lightly golden. Remove from the oven and set aside.
- While the crust cools slightly, whisk together the lemon juice, eggs, lemon zest, almond flour, and salt until smooth.
- Pour the filling over the warm crust and spread it evenly.
- Return the pan to the oven and bake until the filling is just set and no longer jiggles in the center.
- Remove from the oven and let cool completely before slicing. For cleaner cuts, chill briefly in the refrigerator.
